Quick lingonberry crackers
Company is on the way…
Short on time, but need a simple appetizer or snack that will impress your guests? These Quick Lingonberry Crackers are sure to be a hit!
All it takes is three simple ingredients: crackers, cream cheese and lingonberry preserves (jam).
I try to set my cream cheese out in the morning, about 4 hours in advance, so it softens on the counter and is ready to go when I need it. But, if you don’t have time to wait, take your cream cheese out of the packaging, place in a bowl and microwave for 10 second intervals until it’s soft enough to spread easily.
Grab a spoon or butter knife to spread a little softened cream cheese on each cracker and add small dollop of Hafi Lingonberry Preserves on top. Seriously, it’s that simple.
You can also take it a step further with a little garnish of parsley, mint, chives or rosemary. Keep in mind, a little goes a long way so don’t overdue it.
The Perfect Combination
We love this combination because it has it all. Crunchy, creamy, salty & sweet, all in a bite-sized serving.
You can also scale this recipe as needed. Just make up as many or as few as you’d like & your leftover ingredients can be stored and saved for a later date or another recipe. You can also make up more in no time at all so you don’t have to worry about running out.
One of the other great things about this recipe is that you can vary combinations based on what you have on hand too. This is why we say, almost any cracker will do.
I personally like it on Ritz (original or bacon if you can find it), but other buttery crackers are just as delicious. You can also serve them on specialty crackers like sesame or wheat. Just try to avoid crackers with a strong flavor or seasoning which can compete or overpower the other ingredients.
You can also use reduced-fat cream cheese but I find it’s a little more difficult to spread. But it’s totally a personal preference.
Of course, you can also switch up the preserves or jam that you use based on what’s available. Try to steer away from jelly though which is more gelatinized and less user-friendly for this recipe.
You really can’t go wrong. Don’t worry, we won’t tell if you sample a few before serving either ;)
